Super Speedy Banana Pancakes

In need for a quick weaning snack for your toddler, breakfast on a busy school morning or a sweet fiber rich snack for yourself? Look no further, this is honestly one of the quickest, easiest and yummiest banana pancake recipes you will find.

All you need:

2 very ripe bananas

2 eggs

4 Tbsp flour (I used wholemeal spelt flour, but you can use any flour you have at home)

Method:

  1. Mash the bananas with a potato masher or fork, add the eggs and flour and whisk it together with a fork
  2. Heat a pan to medium-high heat, add a lug of oil or small knob of butter. Fry the pancakes for about 5 minutes on each side.
  3. Optional, add blueberries to the pancakes right after adding the batter to the pan, flip after 5mins and fry for another 5mins on the other side.

And that’s it! Suitable for weaning, fussy eaters, toddlers, kids, teenagers and grown-ups! Enjoy the pancakes and let me know how they turned out 🥞
