QUARANTINE COOKING for families – TUNA CASSEROLE

Wondering what to cook for your family, if you have to self-isolate?

This is the first of a series of recipes that are simple, balanced, nutritious and made from ingredients which store well.

The government recommends having two weeks worth of food stock in your home, more is NOT necessary. Please be considerate with your shopping, there is enough for everyone when we only buy what we need.

It is likely that supermarkets won’t struggle to provide fresh ingredients, so my upcoming recipe suggestions might be more suitable for households who have to self-isolate or to use up the stock of canned food you have after the Corona situation has improved.

Enjoy this super simple, quick, balanced and delicious TUNA PASTA CASSEROLE with your family.

INGREDIENTS

1 onion

1 can of tuna

250g pasta

1 small tin evaporated milk

200g frozen peas (or edamame beans)

Some cheese, grated

  1. Pre cook pasta for about 5 mins, then transfer to a casserole dish
  2. Heat the chopped onion in a lug of oil
  3. Add the drained tuna, evaporated milk and peas; season to taste
  4. Pour tuna sauce over the pasta, sprinkle cheese and bake for 20 minutes at 180 degrees
